Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, lemon zest, and lemon juice.
  5. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.
