Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and lemon juice.
  5. In a separate bowl, whisk together the gluten free flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, and mix until just combined.
  7. Divide the batter evenly among the cupcake liners.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
