- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine gluten-free flour, granulated sugar, and softened butter until crumbly.
- Add the egg, vanilla extract, baking powder, and salt to the mixture and mix until well combined.
- Press half of the crumb mixture into the bottom of the prepared baking pan.
- In another bowl, whisk together the fresh lemon juice, lemon zest, and powdered sugar until smooth.
- Pour the lemon mixture over the crust in the baking pan.
- Sprinkle the remaining crumb mixture on top of the lemon filling.
- Bake for 25-30 minutes or until the top is golden brown.
- Allow to cool completely before cutting into bars.
