Delicious and tangy gluten-free lemon crumb bars perfect for summer treats.

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine gluten-free flour, granulated sugar, and softened butter until crumbly.
  3. Add the egg, vanilla extract, baking powder, and salt to the mixture and mix until well combined.
  4. Press half of the crumb mixture into the bottom of the prepared baking pan.
  5. In another bowl, whisk together the fresh lemon juice, lemon zest, and powdered sugar until smooth.
  6. Pour the lemon mixture over the crust in the baking pan.
  7. Sprinkle the remaining crumb mixture on top of the lemon filling.
  8. Bake for 25-30 minutes or until the top is golden brown.
  9. Allow to cool completely before cutting into bars.
  10. Serve and enjoy your delicious gluten-free lemon crumb bars!
