A refreshing and creamy dessert that’s gluten-free and packed with flavor.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1/4 cup coconut cream
  • 1/4 cup honey or maple syrup
  • 1 lemon, juiced and zested
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, combine chia seeds and almond milk. Stir well and let it sit for 10 minutes.
  2. Add coconut cream, honey or maple syrup, lemon juice, lemon zest, and vanilla extract to the chia mixture. Stir until well combined.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand and thicken the pudding.
  4. Once set, stir the pudding again and serve in bowls or jars. Garnish with additional lemon zest if desired.
