- In a bowl, combine chia seeds and almond milk. Stir well and let it sit for 10 minutes.
- Add coconut cream, honey or maple syrup, lemon juice, lemon zest, and vanilla extract to the chia mixture. Stir until well combined.
- Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand and thicken the pudding.
- Once set, stir the pudding again and serve in bowls or jars. Garnish with additional lemon zest if desired.
