A delicious and tangy gluten-free version of the classic chicken piccata, featuring tender chicken breasts in a lemony sauce.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup gluten-free all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each chicken breast in gluten-free flour, shaking off the excess.
  3. In a large skillet, heat olive oil and butter over medium heat.
  4. Add the chicken breasts and cook until golden brown on both sides, about 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer.
  7. Return the chicken to the skillet and cook for an additional 5 minutes, allowing the flavors to meld.
  8. Garnish with fresh parsley before serving.
