Delicious and tangy gluten-free lemon brownies perfect for spring gatherings.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, mix together the almond flour, coconut flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, eggs, lemon juice, and lemon zest.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool before cutting into squares.
