  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix almond flour, coconut flour, and powdered sugar.
  3. Add melted butter to the dry ingredients and mix until crumbly.
  4. Press the mixture into the bottom of the prepared baking dish to form the crust.
  5. Bake the crust for 15 minutes or until lightly golden.
  6. In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
  7. Pour the lemon mixture over the baked crust.
  8. Bake for an additional 20-25 minutes until set.
  9. Allow to cool completely before cutting into squares.

  • For a sweeter taste, adjust the sugar according to preference.
  • Store leftovers in the refrigerator for up to a week.
  • Dust with additional powdered sugar before serving for a decorative touch.
