Deliciously tangy and sweet gluten-free lemon bars that are perfect for any occasion.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a mixing bowl, combine the gluten-free flour, powdered sugar, and softened butter. Mix until crumbly.
  3. Press the mixture into the bottom of the prepared baking pan to form the crust.
  4. Bake the crust for 15 minutes or until lightly golden.
  5. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes, or until the filling is set.
  8. Allow to cool completely before slicing into bars.
  9. Dust with additional powdered sugar before serving, if desired.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • Store leftovers in the refrigerator for up to 3 days.
  • These bars can be frozen for up to 2 months.
