Delicious and aromatic cookies made with lavender and honey, perfect for a sweet treat.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey
  • 1/4 cup unsalted butter, softened
  • 1 tablespoon dried culinary lavender
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter and honey until smooth.
  4. Add the vanilla extract and dried lavender to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. If using, fold in the chopped nuts.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
