Gluten Free Lasagna Soup (Dairy Free)

A comforting one-pot meal that combines the flavors of classic lasagna in a hearty soup. Perfect for families and health-conscious cooks alike.

  • 1 tbsp olive oil
  • 1/2 pound ground beef
  • 1/2 pound ground Italian pork
  • 1 small onion (chopped)
  • 4 cloves garlic (minced)
  • 1 jar (24 oz) marinara sauce
  • 1 can (14.5 oz) diced tomatoes (liquid included)
  • 4 cups low sodium chicken broth
  • 1 tbsp Italian seasoning
  • 1/4 tsp sea salt (adjust)
  • 1/4 tsp ground black pepper
  • 1/4 tsp red pepper flakes (optional for spicy)
  • 2 cups spinach (optional)
  • 1 box (10 oz) gluten free lasagna noodles (broken in half)

Instructions

  1. In a large stock pot or Dutch oven, heat the olive oil. Sauté the onion and garlic until fragrant and the onions turn translucent.
  2. Add the ground beef and Italian sausage. Cook until browned and the meat is cooked through. Drain any excess fat.
  3. Add the marinara sauce, diced tomatoes, chicken broth, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir and bring to a rolling boil.
  4. Add the broken lasagna noodles. Let simmer for about 15 minutes, stirring frequently to prevent clumping.
  5. Before serving, add the spinach and let it wilt. Taste and adjust seasonings and broth as needed. Serve with ricotta or cottage cheese if desired.

Notes

Use high-quality marinara sauce for better flavor. Be cautious not to overcook gluten-free noodles to avoid mushiness.
