A delicious and spicy twist on traditional onion rings, stuffed with creamy jalapeño popper filling.

Ingredients

  • 2 large onions
  • 1 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced jalapeños (fresh or pickled)
  • 1/2 cup gluten-free breadcrumbs
  • 1/2 cup gluten-free flour
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the onions into thick rings and carefully separate them.
  3. In a bowl, mix the cream cheese, cheddar cheese, jalapeños, salt, and pepper until well combined.
  4. Stuff each onion ring with the cheese mixture.
  5. Set up a breading station with gluten-free flour, beaten eggs, and gluten-free breadcrumbs.
  6. Dip each stuffed onion ring first in the flour, then in the egg, and finally coat with breadcrumbs.
  7. Place the breaded onion rings on a baking sheet lined with parchment paper.
  8. Bake for 20-25 minutes or until golden brown and crispy.
  9. Serve warm and enjoy!
