- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the Dijon mustard, honey, olive oil, lemon juice, salt, and pepper.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the mustard sauce generously over the salmon fillets.
- Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
