  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the cornmeal, gluten free flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, honey, vegetable oil, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
