- 2 gluten-free tortillas
- 1 cup cooked chicken, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup bell peppers, sliced
- 1/4 cup onion, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, sauté until softened.
- In a bowl, mix shredded chicken with sautéed vegetables, salt, and pepper.
- Place one gluten-free tortilla in the skillet, sprinkle half of the cheese on top.
- Add the chicken and vegetable mixture over the cheese.
- Top with the remaining cheese and cover with the second tortilla.
- Cook for 3-4 minutes until the bottom tortilla is golden brown.
- Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
- Remove from skillet, cut into wedges, and serve hot.
Notes
- Feel free to add other vegetables or spices to taste.
