- 1 lb ground beef
- 1 can (15 oz) diced tomatoes
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 2 cups sliced zucchini
- 1 cup corn (fresh or frozen)
- 2 cups gluten-free pasta
- 2 cups beef broth
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the chopped onions and bell peppers to the skillet and sauté until softened.
- Stir in the diced tomatoes, zucchini, corn, garlic powder, onion powder, salt, and pepper.
- In a large baking dish, combine the cooked beef mixture with the gluten-free pasta and beef broth.
- Mix well and cover with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- If using, remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
