A hearty and delicious gluten-free casserole made with ground beef and vegetables, perfect for a comforting meal.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) diced tomatoes
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 2 cups sliced zucchini
  • 1 cup corn (fresh or frozen)
  • 2 cups gluten-free pasta
  • 2 cups beef broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the chopped onions and bell peppers to the skillet and sauté until softened.
  4. Stir in the diced tomatoes, zucchini, corn, garlic powder, onion powder, salt, and pepper.
  5. In a large baking dish, combine the cooked beef mixture with the gluten-free pasta and beef broth.
  6. Mix well and cover with aluminum foil.
  7. Bake in the preheated oven for 30 minutes.
  8. If using, remove the foil, sprinkle cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.

Notes

  • Feel free to add any other vegetables you have on hand.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
  • For a spicier version, add diced jalapeños or hot sauce.
