Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 1/2 cup warm water
  • 1/4 cup coconut milk
  • 2 large eggs
  • 1/4 cup melted butter

Instructions

  1. In a large bowl, combine the gluten-free flour, sugar, salt, and instant yeast.
  2. In a separate bowl, mix the warm water, coconut milk, eggs, and melted butter.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Cover the bowl with a clean cloth and let it rise in a warm place for about 1 hour.
  5. Preheat the oven to 350°F (175°C).
  6. Shape the dough into small rolls and place them on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown.
  8. Let cool before serving.

Notes

  • For a sweeter roll, increase the sugar to 1/2 cup.
  • These rolls can be frozen for later use.
  • Serve warm with butter for the best flavor.
