  • 1/2 cup crushed pineapple, drained
  • 1/2 cup coconut milk

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the gluten-free flour, sugar, shredded coconut, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the coconut milk, vegetable oil, eggs, and vanilla extract.
