  • 2 cups gluten-free all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the gluten-free flour, sugar, shredded coconut, baking powder, and salt.
  3. In another bowl, whisk together the eggs, coconut milk, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until well combined.
  5. Fold in the crushed pineapple.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
