- 2 cups gluten-free all-purpose flour
- 1 cup sugar
- 1/2 cup unsweetened shredded coconut
- 1/2 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 1/2 cup vegetable oil
- 4 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix together the gluten-free flour, sugar, shredded coconut, baking powder, and salt.
- In another bowl, whisk together the eggs, coconut milk, vegetable oil, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and mix until well combined.
- Fold in the crushed pineapple.
