- Preheat your oven to 400°F (200°C).
- In a bowl, mix the gluten-free soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper.
- Place the chicken breasts on a sheet pan and pour the marinade over them.
- Add the pineapple chunks and sliced bell peppers around the chicken.
- Toss the vegetables in the marinade to coat them well.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
