A delicious and healthy casserole made with ground turkey and sweet potatoes, perfect for a gluten-free diet.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground turkey over medium heat until browned.
  3. Add the onion and garlic, and sauté until the onion is translucent.
  4. Stir in the diced sweet potatoes, chicken broth, paprika, cumin, salt, and pepper.
  5. Bring to a simmer and cook for about 10 minutes, until the sweet potatoes are slightly tender.
  6. Transfer the mixture to a baking dish and top with shredded cheese if using.
  7. Bake in the preheated oven for 25-30 minutes, until the sweet potatoes are fully cooked and the cheese is bubbly.

Notes

  • For a spicier version, add some chili powder or cayenne pepper.
  • This dish can be made ahead of time and reheated.
  • Feel free to add other vegetables like bell peppers or spinach.
