Gluten-Free Ground Turkey Stuffed Bell Peppers

A delicious and healthy recipe for stuffed bell peppers filled with ground turkey, perfect for a gluten-free diet.

Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked quinoa
  • 1 can diced tomatoes (14.5 oz)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté the onion and garlic until translucent.
  4. Add the ground turkey and cook until browned.
  5. Stir in the cooked quinoa, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the mixture into the bell peppers.
  7. If using, top with shredded cheese.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
