  • 1 lb ground turkey
  • 1 cup quinoa, rinsed
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat until fully cooked.
  2. Add the chopped onion, garlic, carrots, and celery to the pot and sauté until the vegetables are tender.
  3. Stir in the quinoa, chicken broth, diced tomatoes, oregano, basil, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes, or until the quinoa is cooked.
  5. Adjust seasoning as needed and serve hot.
