A refreshing and healthy salad featuring grilled balsamic steak, perfect for a spring dinner.

Ingredients

  • 1 lb flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)

Instructions

  1. In a bowl, whisk together balsamic vinegar, olive oil, garlic powder, salt, and pepper.
  2. Marinate the flank steak in the balsamic mixture for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the steak for about 5-7 minutes on each side, or until desired doneness.
  5. Let the steak rest for 5 minutes before slicing it thinly.
  6. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  7. Top the salad with sliced steak and sprinkle with feta cheese if desired.
  8. Drizzle with any remaining balsamic marinade before serving.
