A delicious and moist banana bread made with gluten-free ingredients and Greek yogurt for added richness.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas and Greek yogurt until well combined.
  3. Add the honey (or maple syrup), eggs, and vanilla extract to the banana mixture and stir until smooth.
  4. In another bowl, whisk together the gluten-free flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
