- Preheat the oven to 375°F (190°C).
- Cook quinoa in vegetable broth according to package instructions.
- While quinoa is cooking, slice the tops off the onions and scoop out the insides.
- In a bowl, mix cooked quinoa, diced tomatoes, feta cheese, olives, garlic, oregano, salt, and pepper.
- Stuff the mixture into the hollowed onions.
- Drizzle olive oil over the stuffed onions.
- Place the onions in a baking dish and cover with foil.
- Bake for 30-35 minutes, or until the onions are tender.
- Remove the foil and bake for an additional 10 minutes to brown the tops.
