A delicious and healthy recipe for Greek chicken bowls that are gluten-free.

Ingredients

  • 2 cups cooked quinoa
  • 1 lb chicken breast, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Grill chicken breast until fully cooked, then slice.
  3. In a large bowl, combine cooked quinoa, grilled chicken, cherry tomatoes, cucumber, red onion, and olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the quinoa mixture and toss to combine.
  6. Top with crumbled feta cheese before serving.
