Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  7. Add the sliced chicken on top of the salad mixture.
  8. Drizzle with additional olive oil and vinegar if desired, and serve immediately.

  • For a vegetarian option, substitute chicken with grilled tofu.
  • Feel free to add other vegetables like bell peppers or spinach.
