A simple and delightful recipe for making gluten-free graham crackers at home.

  • 1 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the almond flour, coconut flour, baking soda, salt, and cinnamon.
  3. Add the honey or maple syrup, melted coconut oil, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Roll out the dough between two sheets of parchment paper to about 1/8 inch thick.
  5. Cut into desired shapes and place on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Let cool before serving.

Notes

  • Store in an airtight container for up to a week.
  • For a sweeter cracker, add more honey or maple syrup.
  • These can be used for s’mores or as a snack on their own.
