  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the gluten-free cake mix, cream cheese, melted butter, eggs, and vanilla extract until well combined.
  3. Chill the dough in the refrigerator for about 30 minutes.
  4. Using a cookie scoop, drop rounded balls of dough onto a baking sheet lined with parchment paper.
  5. Dust the tops of the cookies with powdered sugar.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
