Ingredients

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the gluten-free flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the brown sugar and butter until light and fluffy.
  4. Add the egg and molasses to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Cut out shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
  8. Bake for 8-10 minutes or until the edges are firm.
  9. Let cool before decorating as desired.

  • Store cookies in an airtight container for up to a week.
  • For a spicier flavor, increase the amount of ginger and cinnamon.
