A nutritious and energizing snack made with ginger and turmeric, perfect for a gluten-free diet.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tablespoon ground ginger
  • 1 tablespoon ground turmeric
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut
  • 1/4 teaspoon salt

Instructions

  1. In a large bowl, combine the rolled oats, almond butter, honey or maple syrup, ground ginger, ground turmeric, chia seeds, shredded coconut, and salt.
  2. Mix until all ingredients are well combined.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
