A delightful and colorful gluten-free fruit pizza perfect for spring celebrations.

Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • ½ cup sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 2 cups assorted fresh fruits (strawberries, blueberries, kiwi, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine gluten-free flour, sugar, softened butter, egg, vanilla extract, baking powder, and salt. Mix until a dough forms.
  3. Press the dough into a greased pizza pan to form the crust.
  4. Bake for 15-20 minutes or until lightly golden. Allow to cool completely.
  5. In another bowl, beat together the cream cheese and powdered sugar until smooth.
  6. Spread the cream cheese mixture over the cooled crust.
  7. Arrange the fresh fruits on top of the cream cheese layer.
  8. Slice and serve chilled.
