  • 2 cups gluten-free all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup cold water
  • 1/2 teaspoon salt
  • 1 cup filling of your choice (e.g., cheese, meat, vegetables)

Instructions

  1. In a large bowl, mix the gluten-free flour and salt.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the dough on a floured surface and cut into circles.
  7. Place a spoonful of filling in the center of each circle.
  8. Fold the dough over the filling and press the edges to seal.
  9. Place the empanadas on a baking sheet and bake for 25-30 minutes or until golden brown.
