A simple and healthy baked dish featuring chicken and zucchini, perfect for a gluten-free meal.

  • 2 medium zucchinis, sliced
  • 1 pound boneless, skinless chicken breasts, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchinis, cubed chicken, cherry tomatoes, olive oil, garlic powder, Italian seasoning, salt, and pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased baking dish.
  5. Sprinkle the shredded mozzarella cheese on top.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  7. Let it cool for a few minutes before serving.
