- In a bowl, mix gluten-free flour, cornstarch, powdered sugar, salt, and baking powder.
- Add cold butter and mix until crumbly.
- In another bowl, whisk together egg and milk, then combine with the dry ingredients to form a dough.
- In a separate bowl, beat cream cheese, granulated sugar, vanilla extract, and chopped strawberries until smooth.
- Roll out the dough and cut into circles.
- Place a spoonful of the cheesecake mixture on one half of each circle, fold over, and seal the edges.
- Heat oil in a deep fryer or large pot to 350°F (175°C).
- Fry the pies in batches until golden brown, about 3-4 minutes per side.
- Remove and drain on paper towels.
- Serve warm, optionally dusted with powdered sugar.
