Delicious gluten-free pies filled with creamy strawberry cheesecake and deep-fried to perfection.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup cornstarch
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup cold butter, cubed
  • 1 large egg
  • 1/4 cup milk
  • 1 cup cream cheese, softened
  • 1/2 cup fresh strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

  1. In a bowl, mix gluten-free flour, cornstarch, powdered sugar, salt, and baking powder.
  2. Add cold butter and mix until crumbly.
  3. In another bowl, whisk together egg and milk, then combine with the dry ingredients to form a dough.
  4. In a separate bowl, beat cream cheese, granulated sugar, vanilla extract, and chopped strawberries until smooth.
  5. Roll out the dough and cut into circles.
  6. Place a spoonful of the cheesecake mixture on one half of each circle, fold over, and seal the edges.
  7. Heat oil in a deep fryer or large pot to 350°F (175°C).
  8. Fry the pies in batches until golden brown, about 3-4 minutes per side.
  9. Remove and drain on paper towels.
  10. Serve warm, optionally dusted with powdered sugar.
