A delicious and healthy tart made with dandelion greens and feta cheese, perfect for a gluten-free diet.

Ingredients

  • 1 cup gluten-free flour
  • 1/2 cup cold butter, cubed
  • 1/4 cup cold water
  • 2 cups dandelion greens, washed and chopped
  • 1 cup feta cheese, crumbled
  • 3 large eggs
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the gluten-free flour and cold butter until crumbly.
  3. Add cold water gradually and mix until a dough forms.
  4. Press the dough into a tart pan and bake for 10 minutes.
  5. In a separate bowl, whisk together the eggs and milk.
  6. Add the chopped dandelion greens and crumbled feta to the egg mixture.
  7. Season with salt and pepper, then pour the mixture into the pre-baked tart shell.
  8. Bake for an additional 25-30 minutes or until the filling is set and golden.
  9. Let cool slightly before serving.
