Delicious and healthy gluten-free cookies made with dandelion greens.

Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 cup dandelion greens, chopped
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the almond flour, coconut flour, baking soda, and salt.
  3. In another bowl, combine the honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients until well combined.
  5. Fold in the chopped dandelion greens.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Let cool before serving.
