A hearty and comforting chili mac that is both gluten-free and dairy-free, perfect for a cozy meal.

Ingredients

  • 2 cups gluten-free elbow macaroni
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the gluten-free macaroni according to package instructions. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent.
  3. Add minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.
  4. Stir in the kidney beans, black beans, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and let simmer for 15 minutes.
  6. Add the cooked macaroni to the chili mixture and stir until well combined.
