Ingredients

  • 2 large cucumbers
  • 1 cup cooked chicken, shredded
  • 1/2 cup Greek yogurt
  • 1/4 cup celery, finely chopped
  • 1/4 cup red grapes, halved
  • 1/4 cup walnuts, chopped
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and slice the cucumbers into long strips.
  2. In a bowl, combine shredded chicken, Greek yogurt, celery, grapes, walnuts, and Dijon mustard.
  3. Season the mixture with salt and pepper.
  4. Place a spoonful of the chicken salad mixture at one end of each cucumber strip.
  5. Roll the cucumber around the filling and secure with a toothpick if necessary.
  6. Serve immediately or chill in the refrigerator before serving.
