A rich and creamy soup that is completely gluten-free, perfect for a comforting meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups cauliflower florets
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Pour in vegetable broth and add cauliflower florets.
  4. Bring to a boil, then reduce heat and simmer until cauliflower is tender.
  5. Blend the soup until smooth, then stir in coconut milk.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs.

Notes

  • For a thicker soup, add more cauliflower.
  • Can substitute coconut milk with almond milk for a different flavor.
