  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Season the chicken breasts with salt, pepper, and paprika, then add them to the skillet.
  4. Cook the chicken for about 5-7 minutes on each side until browned.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the gluten-free chicken broth and bring to a simmer.
  7. Stir in the heavy cream and rice, then return the chicken to the skillet.
  8. Cover and cook on low heat for about 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  9. Garnish with fresh parsley before serving.
