A simple and nutritious recipe for gluten-free cottage cheese egg bites, perfect for a quick breakfast or snack.

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese and eggs, and whisk until smooth.
  3. Add shredded cheese and chopped vegetables to the mixture.
  4. Season with salt and pepper.
  5. Pour the mixture into a greased muffin tin, filling each cup about 3/4 full.
