A light and fluffy cloud bread made with cottage cheese and blueberries, perfect for a gluten-free diet.

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs, and mix until smooth.
  3. Add the almond flour, baking powder, and salt to the mixture, and stir until well combined.
  4. Gently fold in the blueberries.
  5. Drop spoonfuls of the batter onto the prepared baking sheet.
  6. Bake for 25-30 minutes or until the tops are golden brown.
  7. Allow to cool before serving.

  • Store leftovers in an airtight container in the refrigerator.
  • Can be served with additional blueberries or a drizzle of honey.
