- In a mixing bowl, combine the cottage cheese, mashed bananas, honey or maple syrup, vanilla extract, and cinnamon.
- Blend the mixture until smooth, adding almond milk gradually to reach desired consistency.
- Once blended, taste and adjust sweetness if necessary.
- Pour the pudding into serving dishes and refrigerate for at least 30 minutes to set.
- Before serving, top with chopped nuts if desired.
