A delicious and healthy twist on traditional banana pudding using cottage cheese.

Ingredients

  • 2 cups cottage cheese
  • 2 ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup almond milk (or any milk of choice)
  • 1/4 cup chopped nuts (optional)

Instructions

  1. In a mixing bowl, combine the cottage cheese, mashed bananas, honey or maple syrup, vanilla extract, and cinnamon.
  2. Blend the mixture until smooth, adding almond milk gradually to reach desired consistency.
  3. Once blended, taste and adjust sweetness if necessary.
  4. Pour the pudding into serving dishes and refrigerate for at least 30 minutes to set.
  5. Before serving, top with chopped nuts if desired.
