  • 2 cups gluten-free all-purpose flour
  • 1/4 cup almond flour
  • 1/4 cup tapioca flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey or maple syrup
  • Sesame seeds or poppy seeds for topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and mix well.
  3. In another bowl, whisk together the gluten-free all-purpose flour, almond flour, tapioca flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Divide the dough into equal portions and shape each portion into a bagel shape.
  6. Place the shaped bagels on the prepared baking sheet and sprinkle with sesame seeds or poppy seeds if desired.
