Gluten Free Cookies

Deliciously chewy gluten-free cookies made with almond and coconut flour, perfect for sharing moments with friends and family.

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup dairy-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the almond flour, coconut flour, coconut sugar, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are slightly golden.
  8. Allow to cool slightly on the baking sheet before transferring to a wire rack.

Notes

For a sugar-free version, consider alternatives like stevia or monk fruit.
