A decadent treat that combines the rich flavors of cheesecake with the crunch of cookies, all while being gluten-free.

  • 1 ½ cups gluten-free chocolate sandwich cookies, crushed
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • ½ cup gluten-free chocolate sandwich cookies, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed cookies with melted butter until well combined.
  3. Press the cookie mixture into the bottom of a greased baking pan to form the crust.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs and vanilla extract, mixing until fully incorporated.
  6. Fold in the whipped cream and chopped cookies gently.
  7. Pour the cheesecake mixture over the crust in the baking pan.
  8. Bake for 30-35 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Make sure all ingredients are gluten-free certified.
  • These bars can be topped with additional whipped cream and cookie crumbs for presentation.
