Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the gluten-free flour, granulated sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix the brewed coffee, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. For the frosting, beat together softened butter, powdered sugar, and brewed coffee until smooth and creamy.
  9. Frost the cooled cupcakes with the coffee buttercream frosting.
