A delicious and creamy coconut chicken and rice dish that is gluten-free and perfect for a comforting meal.

Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, garlic, and ginger; sauté until fragrant.
  3. Add chicken thighs and cook until browned on both sides.
  4. Stir in jasmine rice, coconut milk, and chicken broth.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 20-25 minutes or until rice is cooked and chicken is tender.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.
