4 large eggs
1/4 cup blue cheese , crumbled
4 slices of bacon, cooked and crumbled
Salt and pepper to taste
Preheat your oven to 450°F (230°C).
Separate the egg whites from the yolks, placing the whites in a large mixing bowl .
Using an electric mixer , beat the egg whites until stiff peaks form.
Gently fold in the crumbled blue cheese and crumbled bacon into the egg whites.
On a baking sheet lined with parchment paper, spoon the egg white mixture into cloud shapes.
Make a small indentation in the center of each cloud and carefully place an egg yolk in each indentation.
Season with salt and pepper.
Bake in the preheated oven for about 10-12 minutes, or until the egg whites are golden and the yolks are slightly set.
Remove from the oven and serve immediately.
Notes
For a lighter flavor, you can substitute feta cheese for blue cheese .
