A delicious and fluffy breakfast option that combines cloud eggs with the rich flavors of blue cheese and crispy bacon, perfect for a gluten-free diet.

  • 4 large eggs
  • 1/4 cup blue cheese, crumbled
  • 4 slices of bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Separate the egg whites from the yolks, placing the whites in a large mixing bowl.
  3. Using an electric mixer, beat the egg whites until stiff peaks form.
  4. Gently fold in the crumbled blue cheese and crumbled bacon into the egg whites.
  5. On a baking sheet lined with parchment paper, spoon the egg white mixture into cloud shapes.
  6. Make a small indentation in the center of each cloud and carefully place an egg yolk in each indentation.
  7. Season with salt and pepper.
  8. Bake in the preheated oven for about 10-12 minutes, or until the egg whites are golden and the yolks are slightly set.
  9. Remove from the oven and serve immediately.
